what add custom mobs

Hello everybody, me comes here because I have some questions...

I would like to know how to add maps on my waiter(server), originally they are not there...

I would also like to know how to add new monsters and items if possible

I already have to consider full of topic but none really answers my problems, as for example when I add an item, in my inventory he(it) displays without image and spits my customer when I éssaye to use him(it)...
